Hey thanks for reporting this.
This usually happens on PCs with under 4GB of VRAM. I’ve added a setting called Texture Quality, which is a slider at the top of the Performance tab:
Drag that slider all the way to the left to reduce texture quality to a quarter.
Click the power icon in the top-right of the game and then click EXIT GAME to ensure your settings save.
If the UI issue is still there when you run the game again, create an empty file called bareminimum.txt in the C:/Users/USERNAME/AppData/Roaming/Vercidium folder and restart the game. This will skip loading any extra resources like normal maps when the game starts up.
